Love Monday

Love Monday....

  • Love that Maggie has been sleeping until 7:30 or 8 every morning. I just love those extra few minutes of quiet time.
  • Love that I am 35 weeks along. 5 weeks to go. I requested April 27th for my C-Section. I will find out at my next appointment if that's a go or not.
  • Love the Jeff and Ann Murdock welcomed Grayson David into the world this morning. He was 6 pounds 6 ounces and everybody sounds happy and healthy.
  • Love that I actually am understanding the bookkeeping book that I am reading. I need to keep better track of our rentals, so Dan and I are trying to tackle the book learnin'.
  • Love that my wedding ring still fits. I think at this point with Maggie I was only wearing flip flops, because I couldn't tie my shoes, and the only jewelry I could wear was my earrings.
  • Love Tylenol PM. I ran out on Friday, tried to sleep without it on Saturday night, BIG MISTAKE, and got some by last night. AHHHHH.....a good night's sleep rocks.
  • Love that my parents are coming for a visit on Thursday and Friday.
  • Love that Dan's parents are coming next week.
  • Love that I actually had someone wonder where this list was this morning.
  • Love that I found time to do this list.
  • Oh...and I love the new fish tank with the shiny red rocks in the kitchen. Pictures and explanation to follow later in the week!
Love,
Amanda

Homemade Spaghetti

Tonight's Dinner....I will let you know how it tastes....tonight's the first time I am making it.....wish me luck!

POINTS
® Value: 9
Servings: 6
Preparation Time: 18 min
Cooking Time: 45 min
Level of Difficulty: Easy
This homemade meat sauce is made more nutritious using lean ground turkey instead of fatty ground beef. It gets a flavor boost from a dash of red pepper flakes.

Ingredients

1 spray(s) cooking spray

1 cup(s) onion(s), chopped

4 medium garlic clove(s), minced

56 oz canned tomatoes, plum-variety, undrained, coarsely chopped

6 oz canned tomato paste

1 1/2 tsp dried basil

1 tsp dried oregano

1 tsp sugar

1/2 tsp table salt, optional

1/4 tsp crushed red pepper flakes, optional

20 oz Jennie-O Turkey Store Lean Ground Turkey

12 oz uncooked spaghetti, cooked without added salt and fat, drained

2 tbsp grated Parmesan cheese, or Romano cheese

Instructions

  • Coat a large saucepan with cooking spray; heat over medium-high heat.

  • Add onion to skillet; cook 5 minutes, stirring occasionally. Add garlic; cook 2 minutes. Add tomatoes, tomato paste, basil, oregano, sugar and, if desired, salt and pepper flakes; bring to a simmer. Simmer uncovered 25 to 35 minutes or until sauce is desired consistency.

  • Meanwhile, cook turkey in a large skillet until no longer pink, breaking into chunks with a wooden spoon. Stir turkey into sauce; heat through. Serve over spaghetti and sprinkle with cheese.

Wednesday....

Why didn't everything I ever wanted to accomplish get done before kids?

Maggie is off for the morning with my friend Bobbi. They are headed to story time and to lunch and won't be back until nap time. I have the whole morning to myself....and I have it already filled up with stuff. Don't interrupt me. Hopefully I will have some pictures to post of the crib set soon.

But....I thought it might be fun to start posting my weekly dinner menu. Just in case you need inspiration. Also, if you come across a great recipe that I might like...please pass it on.

Here you go....

  1. Quick Chicken Teriyaki
  2. Beef Stew with Biscuits and Salad
  3. Spaghetti with Meat Sauce and Salad
  4. Sauteed Shrimp with Veggies and Rice
  5. Teriyaki Turkey Burgers with Couscous and Steamed Veggies
All of these recipes are Weight Watchers friendly, by the way!

mmmmmmmmmm, mmmmmmmmmmmmm, good!

Daddy's got a new toy!

We did it. We finally did it! No more test drives. No more endless hours on Craigslist. Here's a picture of the newest addition to the family:

We tested two more trucks last night before we finally decided this was the one. We had actually driven this truck a couple of weeks ago, but we needed to see all of the other hunks of junk that are out there before we realized it was a deal. Dan is super excited and therefore so am I.

Maggie was a real trooper through the whole process. The afternoon started right after her nap, around 3. After the 2nd test drive it was dinner time, so we hit the Pizza Hut in London Ohio. She thought that was a real treat, as did I! We don't go out to eat very often, but we have quite a bit recently, just because when number 2 comes, we aren't sure we will ever leave the house again. Anyway, we then headed to pick up this beauty. We arrived at the dealership around 7:45pm. Maggie's bedtime is 8. Yes, we were pushing our luck. She was awesome. As we nailed down all the details of the purchase she wandered around the showroom putting sticky fingerprints on all of the showroom cars. The sales guys didn't mind a bit. They thought she was just the cutest. I knew that already, but I know I can be biased. Then just before 9pm we pulled out of the car lot to head home with the new truck. Right now, she is still asleep. She didn't get to bed until almost 9:30pm but it seemed like she had just as much fun as Dan and I did. She loves riding in trucks!

So, tonight, Dan wants to put her car seat in it and drive around Columbus showing it off to friends and family. Sounds like fun to me. Who knows...if you live in Columbus, a big blue truck might show up in your driveway sometime tonight.......

Monday

It's Monday. I didn't get nearly enough done this weekend, but OH WELL!! I have a friend who has a blog and does Love, Friday editions. Everybody loves Friday, but who loves Monday? Monday needs some love. So I would like to do, LOVE, Monday....

  • Love that my daughter didn't seem to notice the time change and is still getting up around 7:30/7:45 and allowing me to have a nice quiet breakfast before the day starts.
  • Love that my husband got a sitter on Friday night so we could go out to dinner at Outback Steakhouse (his fave....I just think it's okay)
  • Love that we are ever closer to buying a truck and ending the search. He has it in his head that tonight we will drive a truck home, but we still aren't sure which one yet....
  • Love that I was able to wear a tee shirt and play outside all weekend. It was a wonderful taste of Spring. Keep it coming! I won't even think about the fact that it is supposed to be in the 30s again on Wednesday. boo
  • Love that we went over to Doug and Brandi's for an impromptu cookout on Saturday night. Not only did I not have to cook, but it was great food and great company.
  • Love that my stuff is selling on eBay. I went through my closet and found all of the clothes that were too nice for Goodwill, but I really don't think will ever fit again. I once was a 0/2/4 in all of my clothes. I don't think I will ever see those sizes again, unless I am buying them for Maggie.
  • Love that Maggie wanted to take off her shoes and socks and walk in the grass on Saturday morning.
  • Love working on the crib set again. I am now almost done with the bedskirt. I have the fitted sheet done. Left to do is....the quilt, the bumper, the pillow, and the valances. Not much right?
  • Love that I checked out Amy Butler's Little Stitches for Little Ones book from the library and I now have a diaper bag and a coming home outfit that I want to make. I just need to find a few more hours in the day.
  • Love that Robin Meade is back on Headline News this morning. I watch CNN every morning and I don't like it when they sub in anchors for her. She has a way of making even the most boring news sound interesting. Also....love Rafer and Bob VanDillon. ;)
  • Love Facebook. It's just the best thing since sliced bread for keeping in touch with people. Even if they don't know I am keeping in touch... Friend me if you want....or leave me a comment and I can friend you!
Love,
Amanda
